It is hulled, broken and pre-boiled wheat, a most natural food. We grind our Greek wheat in the traditional restored watermill of Almopia. Wheat is washed, manually picked, crushed in the stonemill and then slightly boiled. This is a mild procedure that allows the wheat to preserve the uttermost of its flavour and nutrients. Bulgur is rich in natural fibres, B and E vitamins, potassium, phosphorus, iron, magnesium and zinc. It is a veritable natural health-boosting food. Try replacing rice with bulgur, add it to soups, or use it in green salads.
