It is the traditional, hand-crafted macaroni. After the Asia Minor Catastrophe and the Greek population uprooting in 1922, refugees that settled in the area of Almopia brought this recipe along with them. Made of flour, semolina, fresh milk and eggs, the dough is kneaded and flattened into layers, dried and finally hand-cut into small macaroni. It is a most laborious procedure that requires a lot of patience and skill. Makarina can be served with fresh butter and cheese or fresh tomato sauce. It goes beautifully with any kind of meat, fish or mushrooms, a type of pasta that lends itself to exquisite combinations to the satisfaction of even the most demanding palates.
