It is hulled, broken wheat, a natural food. We make our korkoto by grinding our Greek wheat in the restored traditional watermill of Almopia. The wheat is washed, manually picked and crushed in the stonemill. This is a mild procedure that allows the wheat to preserve the uttermost of its flavour and nutrients. It is rich in natural fibres, a source of vitamins B and E, potassium, phosphorus, iron, magnesium and zinc, contributing into the good health of our organism. Korkoto is popular with Black Sea Basin cuisine (its most widely served traditional dish with korkoto is called Sorvas) but it can also be easily integrated in a multitude of modern dishes. Try to replace rice with korkoto in soups or boil it and use it as a healthy ingredient in green salads.
