Barley trahana is a functional food, result of collaboration between our workshop and the Science and Food Technology Faculty at the Agricultural School of the Aristotle University of Thessaloniki. Made out of whole-grain barley flour grinded in a traditional watermill, it is rich in b-glucans and other soluble dietary fibres as well as a prime source of vitamins and minerals. B-glucans reduce cholesterol levels, regulate blood sugar levels, have anti-cancer properties and aid weight control, that is why it is labelled as a cholesterol reducing product. The main advantage of barley trahana over other b-glucan containing products lies in the fact that it is recommended to be consumed while hot. High temperatures aid b-glucans being better dissolved and absorbed, thus maximising nutritional benefits.
