It is made with fresh goat milk and Greek wheat flour. It is kneaded, grinded and sieved by hand, and left to dry naturally. Owing to its proteins complex, goat milk does not cause any allergies and is easier to digest than cow milk. This particularly flavoured variety of trahana is ideal for those who suffer from mild lactose intolerance. It is served as soup, teamed with fresh butter and fresh, soft, slightly acidic cheese like “anevato”. It is also cooked as risotto on the side of meat or vegetables.
