Kores is our favourite local pasta. It has long been part of the dietary tradition of the Macedonian region and we are extremely proud to include it in our products. It has actually served as the inspiration to the foundation of our workshop, as we envisioned sharing this local treasure with the rest of the world. It is made of fresh cow milk, fresh eggs and Greek wheat flour. The dough is kneaded, flattened into sheets, dried and then broken into uneven shapes. It is a simple yet exquisitely delicious kind of pasta. There are a lot of recipes for Kores. The all times classic and most popular recipe is boiling it for 3-5 minutes and serving it with fresh butter and grated cheese. Another recipe we hold near to our heart is a kind of soufflé with kores, milk, eggs, cheese and butter, ideal for a delicious, light but filling, healthy supper. One of the must-try dishes!
