A new, extremely tasty and nutritious type of trahana, starring the pumpkin. It is rich in carotenoids, source of vitamins A, B, C and E, in minerals such as magnesium and potassium, as well as in fibres, and is low in fat. Shielding the human organism, it is combined with other ingredients to make a trahana of high nutritional value and delightful to the palate. The whole production process is quite simple. Fresh vegetables are boiled and pulped, then kneaded with Greek wheat flour, crushed by hand and left to dry naturally, in medium temperature. Pumpkin trahana is served as a soup, with fresh butter and graviera (a hard cheese made of sheep or sheep and goat milk). It can be added to a minestrone soup as pasta, accompany a meat dish or be combined with vegetables. No matter how you choose to prepare it, the result is nothing short of delicious.
