Manufactured from organic, whole-grain emmer wheat hulled and grinded in a watermill. Emmer wheat (Triticum dicoccum) seeds have preserved their genetic characteristics intact ever since antiquity as they have not been enhanced or cross-bred as common wheat seeds have. After a long period of abandonment, emmer wheat is currently once again being cultivated in Greece. The recent interest shown in this kind of wheat is attributed to its nutritional properties. Gluten levels of emmer wheat are lower than those of common wheat. It is high in lysine aminoacid, magnesium and other nutrients, while rich in dietary fibres.
